Ingredients
Scale
Filling
- 4 cups fresh or frozen blackberries
- 3/4 cup sugar (adjust to taste)
- 1 tablespoon lemon juice
- 1–2 tablespoons cornstarch or flour (optional, for thickening)
Topping
- 1 cup all-purpose flour (or gluten-free flour blend for GF)
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/2 cup milk or buttermilk (or dairy-free milk for vegan)
Instructions
- Prepare the Blackberries: Rinse blackberries gently under cold water, drain thoroughly, then toss with sugar and lemon juice. Let sit for 10 minutes to macerate and enhance sweetness. Optionally, stir in cornstarch or flour if thickening is desired.
- Mix the Batter: In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs. Gradually stir in milk until batter is thick but pourable.
- Assemble the Cobbler: Grease a baking dish and pour the batter evenly inside. Spoon the blackberry mixture evenly over the batter. Do not stir; the batter will rise around the berries during baking.
- Bake to Perfection: Preheat oven to 375°F (190°C). Bake the cobbler for 40 to 45 minutes until the topping is golden brown and the filling is bubbling around the edges.
- Cool and Serve: Allow cobbler to cool slightly so filling thickens but remains warm and gooey. Serve with vanilla ice cream, whipped cream, or enjoy on its own.
Notes
- Use fresh blackberries for the best flavor and texture.
- Do not overmix the batter to keep the topping tender and flaky.
- Always cut in cold butter, not melted, for a crisp crust.
- Adjust sugar levels depending on the tartness of your berries.
- Check the cobbler a few minutes before baking time is up to avoid over- or under-baking.
