Description

These Chocolate Raspberry Truffles combine rich, smooth dark chocolate with the bright, tangy flavor of freeze-dried raspberries to create an indulgent yet simple homemade treat. Perfect for special occasions or everyday indulgence, these truffles offer a velvety texture, fresh fruitiness, and customizable options for coatings and flavors, making them an elegant and delicious dessert or gift.

Ingredients

Scale

Main Ingredients

  • 200g high-quality dark chocolate (60% to 70% cocoa preferred), finely chopped
  • 120ml heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp freeze-dried raspberries, crushed
  • Optional: 1 tbsp raspberry liqueur or raspberry extract

Coating

  • Unsweetened cocoa powder, for dusting
  • Optional coatings: finely chopped toasted almonds, pistachios, hazelnuts, or powdered sugar

Instructions

  1. Prepare the Ganache: Finely chop the dark chocolate and place it in a heatproof bowl. Warm the heavy cream with the unsalted butter in a saucepan until it just begins to simmer. Pour the hot cream and butter mixture over the chopped chocolate. Let it sit for one minute to soften the chocolate, then stir gently until smooth and glossy.
  2. Add the Raspberry Flavor: Stir the crushed freeze-dried raspberries into the ganache. If using, add the raspberry liqueur or extract as well. Mix thoroughly to combine and infuse the ganache with vibrant raspberry flavor.
  3. Chill the Mixture: Cover the ganache with plastic wrap and refrigerate for at least 2 hours, or until firm enough to scoop without melting in your hands.
  4. Shape the Truffles: Using a small cookie scoop or teaspoon, portion out the chilled ganache and quickly roll it into smooth balls between your palms. Work efficiently to prevent the ganache from melting but gently enough to maintain neat, round shapes.
  5. Coat and Finish: Roll each truffle in unsweetened cocoa powder or your preferred coating, such as finely chopped nuts or powdered sugar. Arrange the finished truffles on a baking sheet lined with parchment paper for easy storage.

Notes

  • Use high-quality dark chocolate (60% to 70% cocoa) for the best flavor and texture.
  • Keep your tools and ingredients chilled to prevent truffles from melting while shaping.
  • Handle the ganache gently but quickly to maintain a smooth texture and well-rounded shape.
  • Freeze-dried raspberries are recommended to avoid excess moisture that can affect ganache consistency.
  • Store truffles in an airtight container in a cool, dry place away from strong odors to preserve their flavor.
  • Leftover truffles can be refrigerated up to 1 week or frozen up to 3 months.
