Ingredients
Scale
Tortillas and Cheese
- 8 soft flour or corn tortillas
- 2 cups shredded cheese (blend of cheddar and Monterey Jack)
Sauce and Seasonings
- 2 cups red enchilada sauce
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper, to taste
Vegetables and Others
- 1/4 cup chopped onions
- 1 tablespoon olive oil or cooking spray
Instructions
- Prepare the Sauce and Cheese: Heat the red enchilada sauce in a small saucepan over medium heat. Stir in garlic powder, ground cumin, salt, and pepper to season. Meanwhile, shred the cheddar and Monterey Jack cheese mixture and set aside for layering.
- Soften the Tortillas: Warm the tortillas to make them pliable. You can microwave them covered with a damp paper towel for about 20 seconds or quickly heat them in a hot skillet with a little olive oil to prevent tearing when rolling.
- Assemble the Enchiladas: Lightly spoon two tablespoons of the enchilada sauce onto the bottom of a baking dish. Dip each tortilla into the sauce, coating both sides. Place a generous handful of shredded cheese and some chopped onions onto the center of each tortilla, then roll tightly. Arrange the rolled tortillas seam-side down in the baking dish.
- Add More Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring they are well-covered. Sprinkle the remaining shredded cheese on top to create a bubbly, golden crust when baked.
- Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the assembled enchiladas for about 15 minutes or until the cheese is melted, bubbly, and lightly golden on top.
Notes
- Warm tortillas just before rolling to prevent tearing.
- Use moderate amounts of cheese to avoid overfilling and bursting during baking.
- Choose a quality enchilada sauce for optimal flavor and texture.
- Mixing cheddar and Monterey Jack cheeses improves meltability and flavor depth.
- Let the enchiladas rest for 5 minutes after baking to set before serving.
