Instructions

  2. Soften the Tortillas: Warm the tortillas to make them pliable. You can microwave them covered with a damp paper towel for about 20 seconds or quickly heat them in a hot skillet with a little olive oil to prevent tearing when rolling.
  3. Assemble the Enchiladas: Lightly spoon two tablespoons of the enchilada sauce onto the bottom of a baking dish. Dip each tortilla into the sauce, coating both sides. Place a generous handful of shredded cheese and some chopped onions onto the center of each tortilla, then roll tightly. Arrange the rolled tortillas seam-side down in the baking dish.
