Ingredients
Scale
Vegetables & Aromatics
- 2–3 stalks fresh celery, finely chopped
- 3 medium potatoes, peeled and cubed
- 1 ½ cups mushrooms (button, cremini, shiitake mix), sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
Liquids & Fats
- 4 cups vegetable broth
- 2 tablespoons olive oil or butter
Pasta
- 3/4 cup short pasta (ditalini, small shells, or orzo)
Herbs & Seasonings
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Prep your veggies: Finely chop onions, celery stalks, and mushrooms. Peel and cube the potatoes uniformly for even cooking.
- Sauté aromatics and mushrooms: Heat olive oil or butter in a large pot. Add onions and celery and cook until translucent. Add mushrooms and garlic; cook until they release moisture and soften.
- Simmer the potatoes: Add cubed potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Cook the pasta separately: In a separate pot, boil salted water and cook pasta until al dente. Drain and set aside to prevent it from soaking too much broth in the soup later.
- Blend part of the soup for creaminess: Use an immersion blender or transfer half of the soup to a blender and puree until smooth, creating a creamy texture without cream.
- Combine and season: Return blended soup to the pot. Add cooked pasta, fresh herbs, salt, and pepper. Warm through for a few minutes before serving.
Notes
- Use a mix of mushroom varieties like button, cremini, and shiitake for richer flavor.
- Cook pasta separately and add at the end to keep it from becoming mushy.
- Taste and adjust salt throughout cooking as potatoes can dilute flavor.
- Blend part of the soup to create luxurious, creamy texture without dairy.
- Add fresh herbs at the end to preserve brightness and aroma.
- Variations: For dairy-free, use olive oil and coconut milk or cashew cream; add protein like shredded chicken or white beans; stir in greens like spinach or kale near the end; spice with red pepper flakes or smoked paprika.
- Store leftovers in airtight container refrigerated up to 3 days; flavors deepen over time.
- Freeze soup without pasta; add freshly cooked pasta when reheating to maintain best texture.
- Reheat gently on stovetop with splash of broth or water if thickened; avoid microwave.
