Description

Creamy Chicken Stuffed Peppers are a comforting and cheesy one-dish meal combining tender chicken, a smooth creamy sauce, and vibrant bell peppers. This colorful, hearty dish is easy to prepare and perfect for family dinners, offering a rich, creamy flavor with a mild, cheesy filling that’s customizable to suit various dietary preferences.

Ingredients

Scale

Vegetables

  • 4 large bell peppers, tops sliced off and seeds removed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Protein

  • 2 cups cooked chicken, shredded or diced

Dairy

  • 4 oz cream cheese, softened
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (cheddar or mozzarella), divided

Spices and Herbs

  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Bell Peppers: Slice the tops off the bell peppers and carefully remove the seeds and membranes to create hollow vessels. Blanch the peppers in boiling water for 3-4 minutes to soften slightly, then drain and set aside.
  2. Cook the Chicken Filling: In a skillet, sauté finely chopped onions and garlic over medium heat until fragrant and translucent. Add shredded chicken, cream cheese, and sour cream or Greek yogurt. Stir continuously until the mixture is well combined and creamy. Mix in paprika, parsley, salt, pepper, and half of the shredded cheese.
  3. Stuff the Peppers: Fill each blanched bell pepper generously with the creamy chicken mixture, pressing lightly to ensure they are well packed. Sprinkle the remaining shredded cheese over the top of each stuffed pepper for a golden, melty crust.
  4. Bake to Perfection: Place the stuffed peppers upright in a baking dish and cover loosely with foil. Bake in a preheated oven at 375°F (190°C) for about 25 minutes. Remove the foil during the last 10 minutes of baking to allow the cheese topping to brown and bubble beautifully.

Notes

  • Choose Fresh Peppers: Use firm bell peppers to hold the filling well and prevent sogginess.
  • Control Moisture: Drain any excess liquid from the chicken or sour cream/Greek yogurt to avoid watery filling.
  • Use Leftover Chicken: This recipe is an excellent way to utilize cooked chicken from previous meals.
  • Even Stuffing: Pack the filling firmly for even cooking and a satisfying texture.
  • Cheese Tips: Combining sharp cheddar with mozzarella yields the best melting texture and flavor.
