- 2–3 sheets nori, crumbled or torn
- 2 green onions, thinly sliced
- 1 tbsp toasted sesame seeds

Instructions
- Prepare the Sushi Rice: Cook 2 cups of short-grain sushi rice according to the package instructions. While still warm, season with a mixture of rice vinegar, sugar, and salt. Stir gently and allow to cool slightly before use.
- Mix the Spicy Salmon Topping: In a bowl, combine the chopped sushi-grade salmon with mayonnaise and sriracha sauce. Add cream cheese if desired. Mix thoroughly until the salmon is evenly coated with the spicy creamy mixture.
- Assemble the Bake: Grease a baking dish and evenly spread the seasoned sushi rice to form a firm base layer. Layer the chopped cucumber and crumbled nori sheets over the rice. Carefully spread the spicy salmon mixture evenly on top of the layered ingredients.
- Bake the Dish: Preheat the oven to 375°F (190°C). Bake the sushi casserole for 12 to 15 minutes, or until the top is bubbly and slightly golden around the edges.
- Garnish and Serve: Remove from oven and immediately sprinkle sliced green onions and toasted sesame seeds over the top. Serve warm with soy sauce on the side for dipping.
Notes
- Use sushi-grade salmon for freshness and safety when consuming raw fish.
- Handle sushi rice gently to keep it fluffy yet sticky.
- Taste and adjust the spice level of your mayo before mixing with salmon.
- Use a shallow baking dish to ensure even baking and heating.
- Let the bake cool slightly before serving to make slicing easier and flavors meld better.
