Ingredients

Scale

Fresh Vegetables

  • 1 cup cucumbers, finely chopped
  • 1 cup tomatoes, finely chopped
  • 1/2 cup radishes, finely chopped
  • 1/2 cup bell peppers, finely chopped

Herbs

  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped

Spices and Seasonings

  • 1 teaspoon sumac (plus extra for seasoning)
  • Salt, to taste
  • Black pepper, to taste

Dressing

  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons olive oil

Pita Chips

  • 2 pieces pita bread, cut into bite-size triangles or strips
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1/2 teaspoon sumac

Instructions

  1. Prepare the Pita Chips: Preheat your oven to 375°F (190°C). Cut the pita bread into bite-size triangles or strips. Toss them with olive oil, salt, and a sprinkle of sumac. Spread on a lined baking sheet and bake for 10–12 minutes until golden and crispy. Set aside to cool.
  2. Chop the Vegetables: While the pita chips bake, finely chop cucumbers, tomatoes, radishes, bell peppers, parsley, and mint. Aim for uniform sizes for an even texture and taste in every bite.
  3. Make the Dressing: In a small bowl, whisk together freshly squeezed lemon juice, olive oil, salt, pepper, and a generous sprinkle of sumac until fully emulsified. This creates a bright, tangy dressing that enhances the salad’s flavors.
  4. Toss and Serve: In a large bowl, gently mix the chopped vegetables with the dressing to coat evenly. Just before serving, add the crispy pita chips and toss lightly to keep their crunch intact. Garnish as desired and enjoy immediately.

Notes

  • Use day-old or stale pita for the crispiest chips.
  • Do not overdress the salad to prevent sogginess; toss just before serving.
  • If you do not have sumac, substitute with lemon zest and a pinch of paprika.
  • Chop vegetables uniformly for balanced textures in each bite.
  • Serve immediately to enjoy the freshest flavors and textures.
