Instructions
- Prepare the Dough: Dissolve the active dry yeast and sugar in warm water and let it bloom for about 5 minutes until bubbly and fragrant. In a large bowl, combine flour and salt. Gradually add the yeast mixture and olive oil, then knead the dough either by hand or using a stand mixer with a dough hook for 8-10 minutes until smooth and elastic.
- Let the Dough Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and allow it to rise in a warm place until doubled in size, approximately 1 to 1.5 hours.
- Mix the Herb & Garlic Filling: While the dough is rising, finely chop the fresh garlic and herbs. Combine them with olive oil and a pinch of salt to create a fragrant and spreadable herb mixture.
- Shape the Rolls: After the dough has risen, punch it down and roll it out into a rectangle on a floured surface. Spread the herb and garlic mixture evenly over the dough. Starting from the long edge, tightly roll the dough into a log. Slice the log into equal pieces and place them cut-side up in a greased baking pan, leaving space between each roll.
- Final Rise and Bake: Cover the pan with a kitchen towel and let the rolls rise again for 30-45 minutes until puffy. Preheat the oven to 375°F (190°C). Optionally, brush the tops with olive oil. Bake for 20-25 minutes until golden brown and cooked through. Remove from oven and serve warm.
