Description

Pecan Pie Brownies are a decadent dessert combining the rich, fudgy texture of classic brownies with a buttery, caramelized pecan pie topping. This treat offers a perfect balance of moist chocolate base and crunchy, gooey pecans for an indulgent flavor experience ideal for any occasion.

Ingredients

Scale

Brownie Base

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (50g) cocoa powder
  • 1/4 teaspoon salt

Pecan Pie Topping

  • 3/4 cup (165g) brown sugar, packed
  • 1/2 cup (120ml) light corn syrup
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (150g) toasted pecans, chopped

Instructions

  1. Prepare the Brownie Base: Start by melting the butter and mixing it with granulated sugar and 1/2 cup brown sugar until smooth. Add eggs one at a time, beating well after each addition, then stir in vanilla extract. Sift together the flour, cocoa powder, and salt, and gradually fold this dry mix into the wet ingredients until just combined, being careful not to overmix.
  2. Bake the Brownie Layer: Pour the batter into a greased 9×13 inch baking pan and spread evenly. Bake at 350°F (175°C) for about 20-25 minutes or until a toothpick inserted comes out with moist crumbs but no raw batter, ensuring a fudgy texture.
  3. Make the Pecan Pie Topping: While the brownies bake, combine 3/4 cup brown sugar, corn syrup, eggs, and melted butter in a bowl until smooth. Stir in toasted pecans and vanilla extract to form the signature caramelized pecan topping.
  4. Add the Topping and Finish Baking: Once the brownie layer is semi-set, pour the pecan topping evenly over the surface. Return the pan to the oven and bake for an additional 20-25 minutes or until the topping is golden and set but still gooey in the center.
  5. Cool and Slice: Let the brownies cool completely in the pan to help the layers set perfectly. Once cool, slice into squares and serve to enjoy the sublime blend of fudgy brownies and nutty caramel topping.

Notes

  • Fresh Pecans: Toast pecans lightly to enhance their flavor and crunch before adding to the topping.
  • Don’t Overbake: Brownies should be slightly underdone in the center for optimal fudginess; they firm up as they cool.
  • Room Temperature Ingredients: Use eggs and butter at room temperature to blend smoothly and create uniform batter.
  • Use a Glass or Metal Pan: These conduct heat better than silicone for even baking and a crispier crust.
  • Cool Completely: Ensure the brownies are fully cooled before cutting to maintain clean edges and perfect layers.
