Instructions
- Prepare the ingredients: Chop the onion and mince the garlic. Dice tomatoes if using fresh. Rinse and drain the black beans and corn if using canned. Gather all ingredients before starting.
- Layer the slow cooker: Place chicken breasts or thighs at the bottom of the slow cooker. Pour diced tomatoes, chicken broth, black beans, corn, chopped onion, and minced garlic over the chicken. Sprinkle chili powder, cumin, salt, and pepper evenly on top.
- Cook low and slow: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Shred the chicken: Remove the chicken from the slow cooker and shred it using two forks. Return shredded chicken to the slow cooker and stir to combine.
- Add finishing touches: Stir in fresh lime juice and adjust the seasoning as needed. Allow the soup to sit for a few minutes to blend the flavors before serving.
