Description

Spicy Chicken Buns are soft, fluffy steamed buns filled with tender, juicy chicken infused with garlic, ginger, and a perfectly balanced spicy chili sauce. Easy to make with simple pantry ingredients, these buns offer a delightful blend of heat and savory flavors, perfect as a snack, lunch, or dinner.

Ingredients

Scale

Dough Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon baking powder
  • 2 teaspoons sugar
  • ½ teaspoon salt
  • 1 cup warm milk or water
  • 1 tablespoon oil

Chicken Filling Ingredients

  • 1 lb chicken breast or thighs, diced or shredded
  • 1 tablespoon chili paste or sauce (adjust to taste)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh ginger, finely chopped
  • 2 scallions, chopped (for filling and garnish)
  • 1 teaspoon sugar
  • ½ teaspoon salt

Instructions

  1. Prepare the Dough: Mix warm milk or water with active dry yeast and a pinch of sugar. Let it sit until bubbly and foamy. Combine yeast mixture with all-purpose flour, baking powder, sugar, salt, and oil. Knead until smooth and elastic. Cover and let it rise for about 1 hour or until doubled in size.
  2. Cook the Spicy Chicken Filling: In a hot pan, sauté garlic and ginger until fragrant. Add diced chicken and cook until no longer pink. Stir in chili paste, soy sauce, salt, sugar, and scallions. Cook until chicken is tender and flavors blend well. Let the filling cool slightly.
  3. Shape the Buns: Punch down the risen dough and divide into equal portions. Roll each portion into a flat circle. Place spoonfuls of chicken filling in the center, then pinch edges tightly to seal and form smooth buns.
  4. Steam the Buns: Place buns on parchment squares in a steamer basket, leaving room for expansion. Steam over boiling water for about 15 minutes until buns are fluffy and cooked through.
  5. Serve Warm and Enjoy: Carefully remove buns from steamer and serve immediately, garnished with chopped scallions or optional sesame seeds and cilantro.

Notes

  • A slightly sticky dough will produce softer buns; avoid adding too much flour.
  • Ensure your liquid is warm, not hot, to properly activate the yeast.
  • Let filled buns rest for 10 minutes before steaming to help them puff up well.
  • Marinate chicken filling for 30 minutes beforehand for deeper flavor.
  • Wrap the steamer lid with a cloth to prevent water from dripping onto the buns.
