Instructions

  1. Prepare the shrimp: Peel and devein the shrimp if needed. Cook them in bubbling salted water or sauté lightly with olive oil until pink and opaque, about 2-3 minutes per side. Drain and let cool.
  2. Prepare the dressing: In a small bowl, whisk together fresh lime juice, olive oil, salt, pepper, and chili flakes to create a zesty dressing.
  3. Chop the fresh ingredients: Dice the avocado, halve the cherry tomatoes, finely chop the red onion and cilantro to prepare the fresh components of the salad.
  4. Toss it all together: In a large bowl, combine the shrimp, avocado, cherry tomatoes, red onion, and cilantro. Drizzle the lime dressing over and gently toss until evenly coated.
