Description

French onion sausage rolls combine the rich sweetness of caramelized onions with juicy sausage meat, all wrapped in crisp, flaky puff pastry. Perfect as a warm snack or party appetizer, these rolls are easy to make, versatile, and loved by both kids and adults. They offer a gourmet twist on a classic favorite, ideal for preparing ahead and serving on various occasions.

Ingredients

Scale

Sausage Filling

  • 500g quality pork or your favorite sausage meat
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil or butter (for caramelizing onions)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp fresh or dried thyme or rosemary (optional)

Assembly

  • 2 sheets puff pastry (use gluten-free if desired), thawed according to package instructions
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Caramelized Onions: Slice onions thinly and cook slowly over medium-low heat with a little oil or butter, stirring frequently until they turn golden brown and sweetly fragrant, about 30-40 minutes. Allow to cool before use.
  2. Mix the Sausage Filling: In a bowl, combine the sausage meat, cooled caramelized onions, salt, pepper, and herbs if using. Mix gently to incorporate ingredients thoroughly without overworking the meat.
  3. Assemble the Rolls: Unroll the thawed puff pastry sheets and cut each into rectangles (about 10×15 cm). Place a thick line of the sausage filling along one edge of each rectangle, leaving a small margin on the sides. Roll the pastry over the filling to enclose it fully and seal the edges using a little water or egg wash.
  4. Apply Egg Wash and Score: Brush the tops of the rolls with the beaten egg to achieve a glossy golden finish. Lightly score the surface with a sharp knife to allow steam to escape during baking.
  5. Bake to Perfection: Place the rolls on a baking tray lined with parchment paper. Bake in a preheated oven at 200°C (390°F) for 20-25 minutes, or until the pastry is puffed, golden, and crisp.

Notes

  • Keep puff pastry cold until the moment of use to ensure it puffs well in the oven.
  • Caramelize onions slowly over medium-low heat to develop rich flavor and natural sweetness.
  • Do not overfill pastry to prevent filling leakage during baking.
  • Chill assembled rolls in the refrigerator for 15 minutes before baking to sharpen pastry layers.
  • Use a sharp knife to score tops cleanly, avoiding tearing or flattening the pastry.
