Description

Garlic Butter Brazilian Steak is a flavorful and juicy steak recipe that infuses rich garlic butter into premium cuts like picanha, ribeye, or sirloin. This easy-to-make dish locks in the steak’s natural juices and is enhanced by a buttery garlic-herb sauce, delivering a tender, succulent, and aromatic meal perfect for any occasion.

Ingredients

Scale

Steak and Seasoning

  • 2 quality steak cuts (ribeye, sirloin, or picanha), about 8-10 ounces each
  • Coarse salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil or neutral oil, 1-2 tablespoons

Garlic Butter

  • 4 tablespoons unsalted butter, softened
  • 3 cloves fresh garlic, minced or crushed
  • 2 tablespoons fresh parsley or cilantro, finely chopped

Instructions

  1. Prepare the Steak: Bring the steaks to room temperature to ensure even cooking. Pat them dry thoroughly with paper towels. Season both sides generously with coarse salt and freshly ground black pepper to enhance the steak’s natural flavor.
  2. Make the Garlic Butter: In a small bowl, soften the unsalted butter and combine it with the minced fresh garlic and chopped parsley or cilantro. Let the mixture rest for a few minutes to allow the garlic to infuse the butter deeply.
  3. Cook the Steak: Heat a heavy skillet or cast-iron pan over medium-high heat and add a splash of olive oil. When the pan is hot, carefully place the steak inside and sear for about 3-4 minutes on each side for medium-rare doneness, or cook longer to your preferred level. Avoid overcrowding the pan to develop a beautiful crust.
  4. Add the Garlic Butter: In the last couple of minutes of cooking, reduce the heat to medium and spoon the prepared garlic butter onto the pan. As the butter melts, baste the steak with it using a spoon to add layers of flavor and keep the meat juicy.
  5. Rest and Serve: Remove the steak from the pan and let it rest for 5-10 minutes to allow juices to redistribute. Serve with an extra dollop of garlic butter on top, garnished with fresh parsley or cilantro.

Notes

  • Choose picanha for a traditional Brazilian cut with a flavorful fat cap that enhances juiciness.
  • Always let the steak rest after cooking to lock in the juices and increase tenderness.
  • Use a very hot pan to sear the steak and form a perfect crust while keeping the interior juicy.
  • Baste generously with garlic butter while cooking to intensify the flavor layers.
  • Season simply with salt and pepper to let the garlic butter and natural steak flavors shine.
