Description

Louisiana Voodoo Fries are a bold and spicy homemade snack that celebrates the vibrant flavors of Cajun cuisine. Featuring double-fried russet potatoes seasoned with authentic Cajun spices, melted cheese, crispy bacon bits, and a creamy, spicy mayonnaise-hot sauce drizzle, these fries deliver a crispy, cheesy, and flavorful experience perfect for game days, casual gatherings, or a tasty side dish.

Ingredients

Scale

Potatoes & Frying

  • 4 large russet potatoes
  • Vegetable or peanut oil, for frying (enough for deep frying)
  • Salt and pepper, to taste

Seasoning & Toppings

  • 2 tablespoons Cajun seasoning (blend of paprika, cayenne, garlic powder, and herbs)
  • 1½ cups shredded cheddar or Mexican blend cheese
  • ½ cup crispy bacon bits (optional)
  • 2 green onions, thinly sliced

Spicy Drizzle

  • ½ cup mayonnaise
  • 2 tablespoons hot sauce (adjust to taste)

Instructions

  1. Prepare Your Potatoes: Wash and peel the russet potatoes, then cut them into evenly sized fries about ¼ inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, ensuring ultimate crispiness when fried.
  2. Fry the Fries: Heat oil in a deep pan or fryer to 350°F (175°C). Drain and pat the potatoes completely dry. Working in batches, fry the potatoes for 4-5 minutes until golden but not fully cooked through. Remove and let them drain on paper towels.
  3. Double Fry for Crispiness: Increase the oil temperature to 375°F (190°C). Return the fries to the hot oil for a second fry, cooking for 2-3 minutes until perfectly crisp and golden brown. Drain and immediately season with salt and Cajun seasoning while hot.
  4. Add Cheese and Toppings: Transfer fries to a baking sheet or oven-safe dish. Sprinkle shredded cheese and bacon bits evenly on top. Place under the broiler or in a preheated 400°F oven for 2-3 minutes, until the cheese melts and bubbles.
  5. Drizzle and Garnish: Mix mayonnaise and hot sauce to create a creamy, spicy drizzle. Drizzle the mixture over the cheesy fries, then finish with chopped green onions for a fresh burst of color and flavor.

Notes

  • Dry your fries completely before frying to avoid sogginess and achieve maximum crispiness.
  • Use a deep-fry thermometer to maintain accurate oil temperature for perfect frying results.
  • Season fries immediately when hot to ensure the Cajun spices stick well.
  • Fry in small batches to maintain consistent oil temperature and crispy texture.
  • Serve immediately for the best texture, as fries lose crispiness when sitting too long.
