Description

Turkish Sigara Borek is a crispy, golden, and savory pastry featuring flaky phyllo dough wrapped around a flavorful feta cheese and herb filling. Quick and easy to prepare, this appetizer offers authentic Turkish flavors with a melt-in-your-mouth texture, perfect for snacks, parties, or breakfast.

Ingredients

Main Ingredients

  • Phyllo Dough, sheets
  • Feta Cheese, crumbled (about 200g)
  • Fresh Parsley, finely chopped (1/4 cup)
  • Egg, beaten (1 large)
  • Butter or Olive Oil, for brushing (about 1/4 cup)
  • Black Pepper, to taste
  • Optional Spices: red pepper flakes or ground cumin, a pinch each

Instructions

  1. Prepare the Filling: In a bowl, crumble the feta cheese and mix it with finely chopped parsley, beaten egg, black pepper, and any optional spices you prefer. Combine well so the mixture holds its shape but is not too wet.
  2. Prepare the Phyllo Sheets: Carefully unroll the phyllo dough sheets on a clean work surface. Cover them with a damp cloth to prevent drying out. Cut each sheet into long, even strips approximately 3 to 4 inches wide.
  3. Roll the Borek: Place about a teaspoon of the filling near one edge of each phyllo strip. Fold the sides inward over the filling and roll tightly into a cigar shape. Brush the ends of the roll with butter or olive oil to seal properly.
  4. Cook Until Golden and Crispy: Either fry the rolled boreks in hot oil until golden brown and crispy or bake them on a greased baking sheet in a preheated oven at 375°F (190°C) for about 20 minutes, turning halfway through to ensure even browning.
  5. Serve Warm: After cooking, transfer the boreks to a paper towel-lined plate to drain excess oil if fried, or serve immediately if baked. Enjoy warm for the best crunch and flavor.

Notes

  • Keep phyllo dough covered with a damp cloth to prevent it from drying and cracking.
  • Do not overfill the phyllo strips to avoid tearing.
  • Brush generously with butter or olive oil for a golden, crispy finish.
  • Cut phyllo strips evenly for uniform cooking and appearance.
  • Choose between frying or baking according to your preferred texture and convenience.
